1 cup milk
½ cup oil or shortening
2 eggs
3 cups flour
1 cup sugar
4 tsp. baking powder
1 tsp. salt
2 cups blueberries (fresh or frozen)
Quickly mix dry ingredients with milk, oil, and eggs. Stir in blueberries. DO NOT OVER-MIX.
Fill 12 paper-lined muffin cups. Bake at 400 degrees F for 15 to 20 minutes.
